Picnic-Perfect Italian Deli Sandwich

Italian Deli Sandwich


🧺 Makes 4 servings | Prep Time: 15 minutes

Ingredients:

🥪1 large ciabatta loaf or 4 ciabatta rolls (split in half)

🥪4 tablespoons pesto (or olive tapenade for variation)

🥪6 slices provolone cheese

🥪6 slices smoked turkey or ham

🥪6 slices salami or pepperoni

🥪1 roasted red bell pepper (jarred or homemade), sliced

🥪A handful of arugula or spinach

Optional: 

👉sliced red onion, banana peppers

👉Olive oil (for drizzling)

👉Salt and black pepper to taste




Instructions:

  1. Prep the bread:
    Slice the ciabatta loaf horizontally. If desired, lightly toast the inside surfaces to prevent sogginess.

  2. Spread the base:
    Spread pesto (or tapenade) evenly over both halves of the bread.

  3. Layer the fillings:

    • Start with provolone cheese (acts as a moisture barrier).

    • Add turkey or ham, then salami or pepperoni.

    • Layer roasted red pepper slices and arugula.

    • Add optional toppings if using.

  4. Season:
    Lightly drizzle olive oil over the top, and season with a bit of salt and black pepper.

  5. Assemble & press:
    Close the sandwich. If making one large sandwich, press it down gently and cut into 4 portions.

  6. Wrap for travel:
    Wrap tightly in parchment paper or foil. Let it sit for 10–15 minutes (or refrigerate up to a few hours) to let the flavors meld.



Tips for a Better Picnic Sandwich:

  • Use crusty bread like ciabatta or baguette to prevent sogginess.

  • Avoid watery veggies like tomatoes unless packed separately.

  • For long trips, keep the sandwich cool with an ice pack.
